Pairings
This wine pairs perfectly with cured meats and savory meats, succulent dishes and tasty, mature cheeses. It is particularly appreciated when paired with Tuscan Pecorino and Parmigiano.
Why we like it
I Sodi di San Niccolò represents the Grand Cru of Castellare di Castellina, one of the first Supertuscans made exclusively with native vines: 85% Sangioveto and 15% Malvasia Nera. The name "Sodi" comes from the Tuscan term used to describe those lands that are difficult to work by hand due to their hardness or slope, while "San Niccolò" refers to the 14th century church located on the Castellare property, around which some of the most suitable vineyards are located. The label features the iconic bird, symbol of the company's commitment to sustainable viticulture, carried out for over 40 years.
The grapes come from the vineyards located in Castellina in Chianti, at an altitude between 350 and 400 meters above sea level, on calcareous soils. The harvest, which takes place in mid-October, is followed by vinification in steel and malolactic fermentation. The refinement takes place for a period of between 24 and 30 months in barriques (50% new), followed by a further 12 months of refinement in the bottle, to best develop the complexity and longevity of this great wine.
