Tasting notes
With a bright garnet color, enriched by delicate ruby red nuances, this wine opens to the nose with intense aromas of cherries, violets and berries, enriched by complex notes of aromatic herbs and a light hint of spices. On the palate it is full and enveloping, with a velvety structure thanks to the perfectly integrated tannins. The minerality of the calcareous soil and the balanced acidity give the wine a long aromatic persistence, culminating in a fresh and precise finish.
Pairings
This wine pairs beautifully with first courses with rich and full-bodied sauces, roasts, white meats and stews. It is also excellent with fish dishes such as monkfish in red wine and with medium-aged cheeses. For a different experience, try it with spicy dishes of oriental cuisine or with boiled meats typical of the Veronese tradition.
Why we like it
The manual harvest of the best bunches takes place in the "Peratara" vineyard, which extends over approximately 4.5 hectares at an altitude of between 550 and 570 meters above sea level. Thanks to the significant temperature variations between day and night, the harvest continues until the end of September. The name "Peratara", which means stony ground in the Venetian dialect, refers to the marl-calcareous soil, rich in skeleton of Cretaceous origin. After a delicate destemming and pressing of the grapes, fermentation takes place in stainless steel tanks at a controlled temperature between 22° and 24°C, followed by 10 days of maceration with daily delestage and pumping over. The wine ages for 2 years in a combination of large barrels, tonneaux, barriques and amphorae, with a further year of refinement in the bottle to complete its evolution.
