This wine comes from a 10-hectare vineyard located 100 meters above sea level, with vines that have an average age of 20 years. The balanced soils, blessed by a delicate Mediterranean climate, give the grapes unique characteristics. After the manual harvest of the grapes, spontaneous fermentation takes place in truncated cone-shaped wooden vats, with manual punching down and long macerations. Aging takes place in French barriques for 18 months, followed by 12 months of bottle aging.
