Ornellaia 2021 perfectly embodies the essence of a typical Bolgheri vintage, characterized by sunny and dry periods, which have given rise to a rich and concentrated wine, yet expressive and generous. On the nose, typical hints of Mediterranean scrub, aromatic herbs and cypress berries emerge, enriched by classic aromas of blackcurrant and dark fruits. On the palate, the dense tannic texture fills the mouth with precision and finesse, while the finish is persistent and vibrant, giving a sensation of aromatic freshness and elegance.
Pairings
It pairs beautifully with red meat dishes, game and mature cheeses. Its complex structure also makes it ideal with rich and tasty dishes such as braised meats and stews, enhancing the flavours with its elegance and depth.
Why we like it
The 2021 harvest of Ornellaia was carried out by hand, with the grapes being collected in 15 kg crates. The bunches were carefully selected on a double sorting table, before and after destemming, followed by a gentle pressing. Starting in 2016, an optical selection was also introduced to ensure even greater quality. Each variety and parcel was vinified separately, with alcoholic fermentation taking place partly in stainless steel vats and partly in concrete vats, at temperatures between 26 and 30°C for a week, followed by maceration for approximately 15 days. Malolactic fermentation took place mainly in oak barriques (70% new and 30% once used). The wine was then aged for 18 months in barriques, with a blend carried out after the first 12 months, followed by a further 6 months of ageing in barriques. Before being released for sale, the wine rested in the bottle for 12 months.
