Tasting notes

A charming and lively garnet red that captures the attention from the first glance. On the nose, it opens with an explosion of morello cherry jam, followed by a fresh note of rhubarb that evolves into an enveloping finish of aromatic herbs. On the palate, it shows great depth and thickness, with the alcohol perfectly balanced thanks to a lively acidity and elegant tannins, creating a truly unique balance.

Pairings

The evolution of this wine makes it ideal to accompany the great dishes of the Italian tradition, such as braised meats and roast game. However, its complexity also makes it perfect enjoyed alone, revealing itself as an excellent meditation wine.

Why we like it

The harvest is done manually at the end of September, with a scrupulous selection of the most beautiful bunches and those best exposed to the sun. The grapes are then dried in boxes for about 4 months, following the traditional drying technique. This process causes a reduction in the weight of the grapes of about 40% due to the loss of water in the berries, thus concentrating the aromas and sugars. In mid-January, after destemming and pressing the dried grapes, fermentation begins, starting from a temperature of 5-6°C until reaching 18-20°C in the final phase. Maceration lasts about 35 days, during which daily delestage and pumping over are carried out. The refinement takes place for 60 months in French oak barriques and tonneaux, followed by a further 42 months in exhausted wood. Finally, the wine rests in the bottle for 6 months before being marketed.
