Tasting notes

The Sauvignon Blanc by Attems 2023 presents itself with a pale and brilliant straw yellow color. On the nose, fresh notes of peppermint, lemon peel and gooseberry emerge, surprising for their depth. On the palate, this light and smooth wine offers citrus sensations, accompanied by hints of Fuji apple and a savory finish, particularly pronounced in this vintage.

Pairings

It pairs perfectly with fish dishes such as filleted sea bass or sea bream sautéed with potatoes, asparagus and non-bitter vegetables. Also excellent with first courses with cheese-based sauces.

Why we like it

The vineyards from which this Sauvignon Blanc comes are located between the plains and slopes of the province of Gorizia, at an average altitude of 60 meters above sea level. The soils are composed of sandstones of Eocene origin, which emerged from the seabed 50 million years ago, and deep alluvial soils rich in pebbles. Part of the pressed grapes (15%) undergo a brief cold maceration, protecting it from oxidation. The juice obtained from soft pressing is left to decant for 24-48 hours, before starting the alcoholic fermentation, which takes place at a controlled temperature of 18-20 ° C for 15 days. The vinification takes place in steel, maintaining low temperatures to avoid malolactic fermentation. After fermentation, the wine rests for 4 months on the noble lees, which are regularly put back into suspension.
