Tasting notes
This wine stands out for its bright straw yellow color, enriched by golden reflections. Complex aromas emerge on the nose, including white pepper and medicinal herbs, harmoniously combined with notes of exotic fruits and white flowers. The taste is full and fresh, characterized by ripe fruit well balanced by a perfectly integrated acidity. The minerality, fruit of the calcareous soil, gives the wine a marked vivacity, which translates into a remarkable length and persistence on the palate.
Pairings
Its pronounced minerality and well-balanced acidity make it perfect to accompany rich and complex dishes, such as creamed cod, risotto alla Milanese, duck breast or foie gras. It also pairs splendidly with oriental dishes, which require wines characterized by flavor and minerality.
Why we like it
The hand-picked grapes of the finest grapes are harvested exclusively in the "Prea" vineyard, which covers approximately 3.8 hectares. Situated at an altitude of between 560 and 610 metres above sea level, this vineyard benefits from high temperature variations between day and night, allowing the harvest to be extended until late October. The name "Prea", which means stone in the Veronese dialect, reflects the nature of the marl-limestone soil, particularly rich in Cretaceous skeleton. The grapes are subjected to a delicate whole-bunch pressing, followed by fermentation in cement tanks at a controlled temperature of between 16° and 18°C. The wine is aged for 2 years in cement and Clayver, with a further six months in the bottle.
