Ripe al Convento 2018 presents itself with a brilliant ruby red color, maintaining its intensity up to the nail. On the nose, it offers a rich and varied profile, ranging from ripe fruit, fresh and crunchy, to floral, finally exploding with a kaleidoscope of tertiary scents. Among the fruity notes, berries, cherry and pomegranate stand out, while among the tertiary scents, pleasant memories of graphite, bitter cocoa and Cuban cigar emerge. This Brunello is ethereal, spicy and fresh, with a crescendo of sensory discoveries. On the palate, it expresses itself in all its power, balanced by a dense tannic texture without harshness. The aromatic persistence is very long and intense.
Pairings
Perfect to accompany roast or grilled red meat dishes, game, and mature cheeses. Also ideal with structured and tasty dishes such as braised or stewed meats.
Why we like it
The Ripe al Convento vineyard, where the Sangiovese grapes for this Brunello come from, is located at 450 meters above sea level, on schistose and galestro soils, with a southern exposure. The grapes are harvested by hand, with an initial selection in the vineyard and a subsequent manual sorting in the cellar, where each grape is scrupulously checked. Fermentation takes place in stainless steel tanks at a controlled temperature, with frequent pumping over, especially in the early stages, to ensure good extraction of color and structure. After fermentation, the wine ages in wood, allowing it to develop optimal aromatic and structural complexity. Ripe al Convento is released onto the market in the sixth year following the harvest, after further refinement in the bottle.
