Tasting notes
The Etna Rosso Riserva 2017 is distinguished by an intense and refined nose, with notes of candied cherry, wild herbs and minerals, bush and wet stone, enriched by hints of white pepper on the finish. On the palate, it is succulent and progressive, with delicate tannins and a lively acidity that lead to a decisive and savory finish.
Pairings
This Etna Rosso Riserva pairs beautifully with dishes such as Beef Wellington and Mushroom Soup with Crostoni, enhancing the rich, sophisticated flavours of the dishes.
Why we like it
The first production year of this Riserva Etna Rosso dates back to 2014. The grapes come from the Montedolce vineyards, in the Solicchiata area, grown on volcanic soils at an altitude of between 730 and 750 meters above sea level, with exposure to the north and north-east. The vines are trained on espaliers with double-arched Guyot pruning and "two-dimensional" saplings. The harvest takes place in mid-October, followed by fermentation in steel tanks for about 10 days, with daily pumping over and a délestage halfway through the period. The wine is aged for at least 48 months, of which 12 months in tonneaux and large French oak barrels, giving the wine complexity and structure.
