Tasting notes

This Franciacorta stands out for its bright, intense straw color, accompanied by a fine and persistent effervescence. On the nose, the aroma develops slowly, revealing warm aromas of yellow peach, hay and almond milk, enriched by subtle balsamic notes of wild fennel. On the palate, the saline and deep notes emerge decisively, creating a structured but also agile wine, with a lively acidity that makes it extremely persistent. The finish leaves a pleasant sensation of licorice and gingerbread.

Pairings

This extremely versatile wine lends itself to multiple pairings at the table. Its fresh and lively notes make it perfect for balancing foods that tend to be sweet, such as crudités of noble shellfish. At the same time, its structure and strength adapt magnificently to sweet and aromatic meat preparations, such as duck breast, or dishes with evident spices.

Why we like it

This Franciacorta is the result of the manual selection of the best grapes, an expression of the quality and passion of the Bariselli family. The first fermentation takes place in stainless steel, where the base rests for at least 8 months before assembly. The early harvest in September guarantees the right alcoholic balance to support the structure of the wine. After a slow fermentation in the bottle, the wine ages for 90 months on the lees, followed by a dégorgement without dosage, enhancing the purity and elegance of the wine.
