Tasting notes
This Franciacorta presents itself with an intense and luminous straw color, accompanied by a fine and persistent perlage. On the nose, it reveals itself gradually, revealing warm aromas of yellow peach, hay and almond, together with light balsamic notes of wild fennel. On the palate, the wine shows a deep salinity, with a solid but also slender structure, supported by a vibrant acidity. The finish is long and persistent, with hints of licorice and gingerbread that leave a lasting impression.
Pairings
The versatility of this Franciacorta makes it ideal to accompany crudités of noble shellfish, as well as sweet and aromatic meat preparations such as duck breast, and dishes characterised by marked spices.
Why we like it
The Bariselli family manually selects only the finest grapes for this Franciacorta, reflecting their dedication to quality. The first fermentation takes place in stainless steel, with the base resting for at least 8 months before blending. The early harvest in September allows for the ideal alcohol balance to support the wine’s structure. The second fermentation in the bottle is followed by aging on the lees for 90 months, with a final zero-dosage dégorgement to maintain the wine’s authenticity and purity.
