Tasting notes
With an intense and brilliant garnet red color, this Amarone releases a rich bouquet of cherries in alcohol and plum jam on the nose, enriched by delicate notes of sweet spices and cocoa. On the palate, it stands out for its fullness and power, displaying a great structure without losing agility. The finish is characterized by present but delicate tannins, which envelop the palate with a sweet and persistent caress.
Pairings
Among the greatest exponents of the great reds of the Italian tradition, this Amarone pairs perfectly with dishes of great structure and intensity. It is ideal with beef braised in wine and with game, enhancing the depth of flavors. Over time, its aging makes it particularly suitable to be enjoyed with dark chocolate, transforming it into an excellent meditation wine.
Why we like it
The harvest takes place at the end of September, with a manual collection of the best bunches, carefully selected for their optimal exposure to the sun. The grapes are then subjected to a drying process in the fruit cellar for about 100 days, during which they lose about 40% of their weight. After a second selection of the best bunches in the fruit cellar, the grapes are destemmed and softly pressed. Fermentation takes place in stainless steel tanks at a controlled temperature between 15° and 20°C, followed by 30 days of maceration, 10 of which are cold, with daily delestage and light pumping over. The refinement takes place for 36 months in new French oak barriques and tonneaux, followed by a further 8 months of rest in the bottle before being released for sale.
